A mash up of two different recipes. The first recipe is lemon infused olive oil on thinly sliced courgettes for the BBQ and other is lemon poppy seed cake. These muffins are light, moist, and refreshing but it makes you feel good because it has vegetables in it.
Ingredients: chickpea flour, courgette / zucchini, eggs, Pure Via sugar substitute, kefir (milk), lemon juice, vegetable oil, poppy seeds, baking soda, cream of tartar, xanthan gum, salt
