Lemon and Poppy Seed Muffins

Lemon and poppy seed baked goods made with chickpea flour are my nemesis. You may notice that there is not a lemon and poppy seed bread, and that is because it just does not work. Or should I say, it works too well, but when you take it out of the oven it falls outstandingly into the Grand Canyon of bread. I ate so much of this combination when trying to get the bread to work I almost did not include the muffin recipe. I love the flavour combination, and since they are muffins, the fall is not so noticeable, so here they are. Don’t even get me started about trying to add courgettes ― as Charlie Brown would say, “ARRRGGGHHHHH”. Make lemonade after this recipe because it only uses the zest of 4 lemons.
