Waffles are so versatile. One of my favourite preparations is a cold waffle with strawberry jam ― sugar-free, of course. Waffles can be frozen in a plastic bag with wax/greaseproof paper in between and then reheated in the toaster for a quick breakfast. Waffles make a great dessert or late-night snack, covered with a mixture of butter, brown sugar, and coconut, then toasted under the grill and finished with a big dollop of vanilla ice cream. This recipe makes four medium waffles but can easily be doubled.
