Onion Bhaji

This is a book about using chickpea flour, so it would be remiss of me to not include a recipe that is probably the best-known use for it, the onion bhaji. An onion bhaji is a popular Indian snack or appetizer made from thinly sliced onions that are coated in a spiced batter and deep-fried until crispy. Here is a baked version that is a great accompaniment to an Indian meal or a snack to soak up too much beer. Make the bread ahead of time and let cool completely so that the dough is not soft. You can reheat a slice for 15 seconds in the microwave, but it is just as good cold. I would suggest serving it with a riata which includes diced cucumber, diced fresh mint leaves, a pinch of salt, and yoghurt.
