Crackers for Cheese

I did not realize that I lived almost on top of an award-winning handmade cheese producer, which uses the pastures of Cadbury Castle in Somerset for its Jersey cows. Montgomery’s Ogleshield is washed with a special brine every three days to achieve a moist, slightly pungent rind which softens the cheese and gives it an extra depth of flavour. Montgomery’s Cheddar is the epitome of traditional, handmade, unpasteurised Somerset cheddar. Its deep, rich, nut flavours have won worldwide acclaim. These crackers provide a neutral-tasting base with just a little salt for these glorious cheeses. They are cut out using a biscuit/cookie cutter, but you can simply cut them into squares or rectangles like the other cracker recipes. Another great benefit of chickpea dough is that you can reroll it as many times as you like without toughening the crackers because there is no gluten.
