Coronation chicken or Poulet Reine Elizabeth is an English dish of boneless chicken traditionally seasoned with parsley, thyme, bay leaf, cumin, turmeric, ginger and peppercorns, mixed with cream or mayonnaise, and dried apricots (or sultanas). This bread has the flavour of coronation sauce, so all you need to add is chicken and mayo. Make sure to put coconut milk in the fridge upside down and defrost the mango several hours in advance. Frozen mango will macerate when thawed and allow you to easily make a puree, which is a great sugar-free substitute for mango chutney.
